As a result the wine is fresh and bright with the perfect amount of tannins to add structure and complexity.

Reception:

Directly at the sorting table. Use of gravity flow system, no pumps.

Fermentation:

Whole berries in stainless steel tanks.

Yeasts:

Indigenous.

Alcoholic Fermentation:

13 días a 24ºC (75,2ºF).

Maceration:

3 pumpovers per day, and 3 délestage total. 10 days of skin maceration.

Malolactic Fermentation:

100% natural at the end of May.

Aging:

25% aged 10 months in new French / Bordeaux oak barrels.

Maturation:

Non-filtered. Natural cold stabilization.
