Alpasión Old School

This wine is a special release and not one that we make every year.

The Alpasión Old School is a blend of grapes and, at times, also a blend of vintages.

Aged for at least 24 months in French Bordeaux style barrels gives the wine the capability of being cellared for decades. The additional aging in the bottle of at least one year also allows for this wine to be enjoyed immediately with some decanting.

Intense ruby red in color with flecks of violet in the glass. Aromatics of ripe black fruits and spice meet leather, smoke, and kalamata olive.

Reception:

28 days at 28ºC (82,4ºF).

Maceration:

3 pumpings per day and 6 total delestage. 20 days of maceration with skin.

Malolactic Fermentation:

100% natural at the end of May

Aging:

100% aging 24 months in French oak barrels

Maturation:

Non-filtered. Natural cold stabilization.
